SEARED TUNA WITH FRESH WASABI SAUCEingredients
4 pieces (6 ounce size) fresh tuna 3 tablespoons peanut oil 1 1/2 teaspoon (dark) sesame oil 1 tablespoon dry sherry 1 1/2 teaspoon minced fresh ginger 1/2 cup radish microgreens or other spicy microgreens 2 green onions, thinly sliced 1/3 cup soy sauce, low sodium 6 tablespoons fresh ground wasabi microgreens 1 large cucumber, seeded, peeled and julienned |

Whisk together soy sauce, 2 Tbsp. of the peanut oil, sherry, sesame oil and ginger. Stir in green onion. Set aside.
Sprinkle tuna with salt and pepper.
Heat remaining peanut oil in a heavy large skillet over high heat. Add tuna and sear until opaque in center, about 3 minutes per side.
Spoon cucumber onto center of plates. Top with tuna. Add the ground fresh wasabi microgreens to the sauce and spoon sauce around the tuna.
Garnish with radish microgreens.
